Green Bean Casserole

Grandma's Green Bean Casserole

Green Bean Casserole 
(a favorite at Thanksgiving)

2 T Butter
2 T All-Purpose Flour
1 t Salt
1 t Sugar
1/4 cup Diced Onion
1 cup Sour Cream
3 cans French Style Green Beans
2 cups Shredded Cheddar Cheese
1/2 cup crumbled Ritz crackers
1 T Butter, melted

  1. Preheat oven to 350 degrees F.
  2. Melt 2 tablespoons butter in a large skillet over medium heat. Stir in flour until smooth, and cook for one minute. Stir in the salt, sugar, onion, and sour cream. Add green beans, and stir to coat.
  3. Transfer the mixture to a 2 1/2 quart casserole dish. Spread shredded cheese over the top. In a small bowl, toss together cracker crumbs and remaining butter, and sprinkle over the cheese.
  4. Bake for 30 minutes in the preheated oven, or until the top is golden and cheese is bubbly.
  5. *Rich and NOT Low cal...but delicious.





Fresh Corn Salad

Fresh Corn Salad

Ingredients

5 ears of corn, shucked
1/2 cup small-diced red onion (1 small onion)
3 tablespoons cider vinegar
3 tablespoons good olive oil
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/2 cup julienned fresh basil leaves
ADD CHECKED ITEMS TO GROCERY LIST
Directions

In a large pot of boiling salted water, cook the corn for 3 minutes until the starchiness is just gone. Drain and immerse it in ice water to stop the cooking and to set the color. When the corn is cool, cut the kernels off the cob, cutting close to the cob.
Toss the kernels in a large bowl with the red onions, vinegar, olive oil, salt, and pepper. Just before serving, toss in the fresh basil. Taste for seasonings and serve cold or at room temperature.

Oven Cooked Carrots from Winnifred Jardine



1 pound carrots peeled, cut into 1/2 to 1 inch pieces.
Put 2 tbs. butter into a baking dish with carrots, 1 tsp. sugar, 1/4 tsp. salt and 2 Tbs. water.
Cover. Bake 350 degrees for 30-45 min.  Serves 4.

This is easy to make and great with an oven cooked meal.
May be microwaved on high for 6 minutes.

Shrimp Pasta Salad



Shrimp Pasta Salad

6 stocks of celery (cut in 1/2 and slice)
2 cups macaroni
1/2 bunch green onion
1 can of medium deveined shrimp (rinse)
2 cups miracle whip
2/3 cup ketchup
1/4 cup chili sauce

Mix all together and chill. Serve with potato chips and diet coke!
Cauliflower with Ginger and Mustard Seeds     from Janet

About This Recipe
"Cauliflower, all spiced up! Yum! This came from Gourmet Magazine."
Ingredients
o    3 tablespoons vegetable oil
o    2 teaspoons yellow mustard seeds or 2 teaspoons black mustard seeds
o    2 teaspoons grated peeled fresh gingerroot
o    1/2 teaspoon turmeric
o    1 head cauliflower, cut into in small 1 inch florets ( about 1 3/4 to 2 pounds)
o    1 1/2 teaspoons fresh lemon juice
o    3 tablespoons chopped fresh coriander (optional)
Directions
1.    In a large skillet, heat the oil over moderate heat until it is hot but not smoking; cook the mustard seeds, covered, stirring occasionally, until the popping subsides.
2.    Add the gingerroot and the turmeric and cook the mixture, stirring, for 30 seconds.
3.    Add the cauliflower, stirring to coat it with the oil, and 1/2 cup water and steam the mixture, covered, adding more water a few tablespoons at a time if it evaporates, until the cauliflower is just tender, about 6 to 10 minutes.
4.    Season the cauliflower mixture with the lemon juice, salt, and pepper and stir in the coriander, if using.

5.    Enjoy!
Roasted Acorn Squash w/ honey           from Kelly

  1. Preheat oven to 350 degrees F.
  2. Slice squash in half lengthwise. Remove and discard seeds. Lay squash skin side up in a shallow baking pan. Bake for 40-45 minutes.
  3. Remove squash from the oven and flip over, return to the oven. Bake for 10 more minutes or until squash is tender.
  4. Remove from oven; set aside for 10 minutes to cool.
  5. Once cool enough to handle, scoop squash from skin.
  6. Mix with honey, butter, salt and pepper. Serve warm like mashed potatoes.
